JAKE NICOLSON

Ghanem Group Executive Chef

Victorian-born Jake Nicolson brings decades of experience and a passion for seasonal produce to his role as Executive Chef at Ghanem Group. His career spans prestigious kitchens including London’s The Square and The Ledbury, and Melbourne’s Circa the Prince, where he served as Head Chef. After leading the launch of Blackbird Brisbane in 2013, Jake now returns home to oversee the opening of Blackbird Melbourne, blending the finest produce from both Victoria and Queensland.

Aaron Clark's journey with Ghanem Group began in 2009 as Bar Manager of Byblos Bar & Restaurant. Over the years, his wealth of expertise has secured endless beverage programs awards for each of Ghanem Group's venue openings to follow. including Blackbird Brisbane, Donna Chang, Boom Boom Room, Iris Rooftop, Bisou Bisou.
